Small lot wines

 
FROM BUD-BREAK TO CONSUMER:
  • It all begins in January of each year with controlled pruning to avoid overcropping of the vines.

  • In April, bud-break (new growth), ensues and organic cultivation continues until early August when the grapes start turning color.

  • In early October, when the sugar and acid levels are balanced, the clusters are handpicked and meticulously groomed to insure that only sound grape berries make their way to the winery.

  • At the winery, the grapes are foot trodden and hand destemmed for a pure berry autochthonous (indigenous), fermentation.

  • When fermentation is complete the wines settle and remain “Sur lie” (over the lees), for ten months before going to barrel.

  • After 12 months in barrel, the wines return to stainless steel tanks for an additional twenty-four months of natural gravity fining before bottling.

  • Bottled wines remain cellared for a minimum of fifteen months to complete a five-years evolutional journey before made available for enjoyment.
